Sunset at "The Cove", Vancouver, WA

My husband and I went to "The Cove" at the tail end of summer this year and absolutely LOVED it! It's not far from the restaurant, Beaches, in fact about 1.5 mile down the river. The owners of "The Cove", also run "The Hammond" in Camas, WA.

The weather was nice enough to sit out on their lovely deck with an amazing view of the Columbia River and Tidewater Cove Marina. We started off with Corn Chowder that was full of clam meat, potatoes and a whole different taste from New England style. The consistency was the same but the flavor is by far my favorite and let me tell you we have traveled all along the Pacific Northwest coast to sample the different clam chowder recipes and this chowder was so flavorful (like a party in a bowl) sprinkled with Paprika, yum! We ordered a half dozen fresh oysters that come with 3 sauces, horseradish cocktail, shallot mignonette and daikon relish. The oysters were very fresh and the sauces complimented them very well, in fact, all 3 on one oyster was amazing! My husband and I almost fought over the last oyster (ha!) The main dishes were their Rib Eye and Mary's Mongolian chicken half. Rib eye was cooked to perfection with lemon aioli asparagus and the chicken was very moist and flavorful. Peach chutney was served with the chicken which made it even more delicious. If you love wine like I do, their selection is very good, decided on their Pinot Noir and my husband had a Spanish Coffee for dessert which was not overpowering and smooth. Some restaurants don't light the rim, but they do here! It's just not a Spanish coffee without the sugar melt on the rim, yum!
